Easter Traditions in Cyprus – Part two

On Thursday most Cypriot women do their Easter baking of “flaounes”, a Cyprus cuisine specialty, a kind of cheese cake made of short crust with a cheese, egg and mint filling, formed into triangular and square shapes. “Koulouria” are baked with milk, spices and a little sugar and “Tyropittes” ~ loaves with small pieces of cheese added and rolled in sesame seeds.

Eggs are dyed as well. Traditionally they are dyed red with a special root called “rizari” that is sold in bundles at the market during these days. They are also dyed yellow; for this purpose the yellow marguerites that cover the waysides and fields during April are used. Some dye their eggs in a more artistic way by tying the marguerites onto the eggs with a piece of muslin before boiling them in a colour.

Good Friday begins with everyone taking flowers to church so that the young girls can decorate the “Epitafios” ~ Holy Sepulchre. This, in our church, is a four-postured litter with a canopy in which the icon of Christ is laid in state. The whole structure is completely decorated with flowers, a job that takes the greater part of Good Friday morning.
At lunchtime the traditional “Faki Xidati” – vinegar and lentil soup – is eaten, containing vinegar because it is said that when Christ asked for water on his way to Calgary He was given vinegar instead.

From early afternoon you will see streams of cars and pedestrians going from church to church to pay their last respects to Christ – and to compare the decoration of their own parish “Epitafios” with that of the others.

In the meantime, all the streets along which the “Epitafios” will pass in the solemn procession later that night are being decorated with coloured lights. The procession starts after the evening service with the priests preceding, then the Scouts or young men carrying the litter of Christ and then the choir, singing hymns. The whole congregation follows, and children light sparklers on the way.

Saturday is a quiet day, although there is a sermon towards lunchtime during which the church doors are banged and candleholders shaken, when the news is brought that Christ is no longer in His grave.

The real sermon of resurrection is at about midnight. Everybody goes to church with a candle and the sermon is held. A big bonfire is lit in the church yard. When the priest proclaims that “Christ has risen”, all candles are lit and everyone greets everyone else with “Christos anesti” ~Christ has raised, to which the other answers “Alithos anesti” ~ Indeed He has risen.

Easter is the most important holiday for the Orthodox Church and is coming on Sunday 24th of April this year. It’s date vary every year and is fixed according to the noon – that is to say, it is always celebrated on the first Sunday following the full moon of the spring equinox.

To celebrate Easter everything should look clean and new, so houses are cleaned, painted or white-washed, and new clothes are a “must”, especially new shoes.

The Holy Week is dedicated to church-going and to baking, etc.
At seaside places preparations for Palm Sunday can be seen from the previous Friday. In the coffee shops, fishermen sit and plait intricate “vaynes” ~ palm-leaf flower holders ~which when finished, resemble little swallows’ nests perched on sticks. The fishermen sell these and the young children fill them with flowers and take them to church on Palm Sunday when they follow the icon of Christ around the church in a procession commemorating Christ’s entry into Jerusalem. The older boys hold large palm leaves. Olive leaves are put into pillow-case-like sacks which are taken to church; there they are kept for forty days after which they can be used for incense burning. From now on there are church services morning, afternoon and evening.

One you can enjoy now is the Cyprus wild asparagus or ‘Agrelia’ as it known here.

These baby wild asparagus are a real delicacy, they grow in the wild and are hand picked. They can be cooked in various ways and the most traditional way these are prepared and served is with eggs ‘Agrelia me avga’ .

Here is how to prepare them if you are lucky enough to find them in the nature:

Fry the asparagus (use only the upper half of the asparagus which is the soft part) lightly in olive oil for about 10 minutes until soft. Break an egg directly into the pan and stir continuosly until it mixes well with the asparagus. Allow to cook on low heat for a further 5 minutes stiring occasionally. Add seasoning and serve while hot.

The Plan for covers an extended area of 60.000 ha equal at about 50% of public forest land. Cyprus has the oldest wine in the world that is still in production, Commandaria or Commanderia .  It’s not one for purists and is really a fortified wine – excellent for cooking, but it has a long history going back supposedly around 4000 years, when Homer mentions a sweet wine produced in Cyprus.

It is made from the local Cyprus mavro and xinisteri grapes and its name derives from the Gran Commanderie, an area surrounding Kolossi Castle which can be found just west of Limassol.  The Castle was the Commanderia  or headquarters of the Knights Templars in the 12th Century. The wine was consumed locally, supposedly by the Knights and also exported to many European Royal Courts.  Legend has it that, during his Marriage with Berengaria, in the 12th century Richard the Lionheart pronounced Commandaria to be the “wine of the kings and the king of the wines”.

The Cyprus Tourism Organisation has created a number of wine routes around Cyprus that enable you to make a day of it, sampling wines from numerous vineyards will touring villages throughout Cyprus, some around Pafos, Limassol and up into the Troodos.  Cyprus wine is gaining reputation and today there are many boutique wineries producing some excellent red, white and rose wines.

The said Regulations allow one to obtain the Cyprus Healthcare Card if he/she falls under certain income criteria. People with high income are not entitled to this card and as a result will not be entitled to an EHIC.

If you are from a non-EU country unfortunately you are not qualified for the EHIC, and in this case, you will need to pay a private doctor.

Healthcare for EU citizens permanently residing in Cyprus

Healthcare in Cyprus can be provided, just like in most countries of the world, either privately by paying a private doctor or clinic or publically, by paying governmental medical institutions and doctors.

To obtain healthcare from governmental institutions for free or by paying reduced medical fees, one needs to obtain a specific medical card. To apply for the said medical card, you must either be a Cypriot citizen or an EU citizen who resides permanently in the Republic of Cyprus. According to the relevant law, permanent residency for healthcare purposes, can be obtained via a minimum of a continuous 3-year stay in Cyprus and with an at least 150 days stay within the Republic in each year. In practice, a Registration Certificate (the so called “yellow slip”) accompanied by other relevant documents will suffice and the whole process might thus be approved at a period earlier than the 3 years.

The aforementioned medical card application must be filed in the Citizens Service Centers.

Another important criterion for obtaining the medical card, is that one of the following must be met:

There are two types of medical cards in Cyprus, Card A and Card B:

Medical Card A (pink card – free medical care) is issued to the following persons:

(a)   Persons without dependants whose annual income does not exceed €15,377.41.

(b)   Members of a family whose annual income does not exceed  € 30,754.83 increased by €1,708.60 for each dependant child.

(c)    Members of a family with four or more children.

(d)   Enslaved persons and members of their families.

Medical Card B (blue card – treatment at reduced fees) is issued to the following persons:

(a)   Persons without dependants whose annual income exceeds €15,377.41 but not €20,503.22.

(b)   Members of a family whose annual income exceeds the amount of €30,754.83, but does not exceed the amount of € 37,589.23, increased by € 1,708.60 for each dependant child.

Certainly, in cases of serious or congenital diseases the abovementioned income criteria do not apply and healthcare is provided irrespective to the above.

Under onsdagen håller Karin Ehnbom-Palmquist som är styrelsemedlem i 1,6 miljonerklubben, ett föredrag om kvinnors hälsa och välbefinnande sedan får vi en presentation av Londas organiska spa program.

På fredag kväll blir det en gala middag då Katarina Fallholm underhåller och veckan avslutas med ett stort smörgåsbord på söndagen.

Vi i Pafos har våran sedvanliga månadsträff på lördag så efter allt detta kan det bli skönt att återgå till ett betydligt lugnare Cypriotiskt tempo.
